Honey Garlic Chicken

This honey garlic chicken received the highest approval rating from my family last night. I was surprised. The ratio of the ingredients in the sauce was visual, and no measuring cup was involved as I was in a hurry. The fam was hungry.

But still, it has the perfect balance of tangy, sweet, and salty flavor. It must be the best honey garlic chicken dish I have ever cooked so far. It has crunchy bits because I coat the chicken with corn flour (which helps thicken the sauce) and fry it until crisp.

I've tried my best to remember the ratio of the sauce ingredients but you can always do the taste test to see if it is balanced.

Ingredients

8-10 chicken thighs (skin on)

4-6 tbsp of corn flour + more if necessary

1 tsp salt

oil for frying

1 clove of garlic peeled and minced

For the sauce

6 tbsp honey

4 tbsp soy sauce

4 tbsp teriyaki sauce

4 tbsp oyster sauce

3 tbsp apple cider vinegar

2 tbsp brown sugar

1 tsp sesame oil

1/2 tsp salt

1/2 tsp pepper

1/3 cup water

chopped parsley for garnishing

Procedure

Add 1 tsp of salt to the chicken, mix it, coat it in corn flour and fry in hot oil until crisp. Set chicken aside

In a bowl, combine sauce ingredients and stir until sugar and honey are well dissolved in the liquid. Taste the sauce mixture to see if it is balanced. Adjust accordingly.

Remove most of the oil in the frying pan where the chicken was fried. Leave at least 2 tbsp of oil

Saute garlic in the pan, and scrape off the bottom of the pan to get the corn flour that was stuck as it will help to thicken the sauce. Add the sauce mixture and let it simmer. 

Add the chicken pieces and coat each piece with the sauce. The sauce will continue to thicken and reduce. Check if the sauce consistency is as per your liking. Garnish with chopped parsley.

Serve with rice and enjoy.
